Spicy minced lamb topping roasted in the oven for 5 minutes (yes, 5 minutes!) and you’re good to go!

Lamb flatbreads fundamentally requires two important components – lamb mince and flatbread dough.

For my lamb flatbreads recipe I make my ownno-yeast flatbreadfrom scratch.. yes, I know that sounds a bit idyllic but seriously, my flatbread dough recipe can be made in a few minutes. You could use ready made flatbreads or tortillas but when it’s this quick and easy why not make it yourself?

Wanna walk and masticate at the same time? Then roll up your lamb flatbread and off you go!

There is something about a good home-made flatbread; it makes the humble sublime. A freshly cooked flatbread dipped into a lushGreek eggplant dip(melitzanosalata) or used as the edible duvet to achicken gyros. A decent flatbread dough recipe is something everyone should have (so print off myflatbread recipeand keep it where-ever you keep your recipes!).

On another note, if like me your house is infested with these tiny people that are very loud, eat alot and leave a trail of mess wherever they go. This is a must have food for kids recipe.

Whether you want to call this a children’spizza, a kid-friendly lamb wrap or a get-down-with-your-bad-self street food for the grown ups – this is simply delicious lamb flatbreads recipe.

I’ve found that what kids make, they eat. I’ve also found that most kids, if they are like mine, need entertaining. The phrase‘Daaad…I’m booored…’is an all too familiar phrase from an all too young age. Thus combining making lunch and then eating it is downright parenting heaven.

I prepare all the ingredients for the lamb flatbreads, stick it on the table (don’t share them, keep it separate otherwise they’ll argue) and let them make a mess and with a little direction they are making their own lunch..

Ha! Parents 1 – Kids 0!

I should point out that although I’m banging on about how great my lamb flat breads arefor the kids, the certificate 18 version is even better. Freshly made soft flatbread (with only two ingredients), lots ofchilli (harissa paste works great), a few spicescombined with some good quality lamb mince andyou’ve hit the gastronomic jackpot!

Just stretch out your flatbread dough, paste on the lamb mice and pop the lot in the oven for 5 minutes.

I’ve noted quite a few ingredients but ultimately as long as you have some onion and garlic and fresh herbs you can’t go wrong. And like most of my recipes they are designed as a guide, an example of what I’ve cooked but not set in stone. Throw in some chopped olives and sun-dried tomatoes, or if you fancy taking this to a more Indian theme; add some curry powder and fenugreek leaves.. but whatever you do. Do just make it!

Oh, and if you’ve got a pizza oven this is made for that! But I don’t, so I use my regular fan-assisted… 🙁

Lamb Flat breads Recipe:

Flatbread Ingredients (3 large ones):

1 cup/150g/250ml plain flour

1/2 cup (just over)/150g Greek Yoghurt.

2 tbs olive oil

Pinch of salt

Flatbread Method:

  1. Mix all the ingredients together, then dust a work surface with some flour and give it a quick kneed – it doesn’t take much and is a very soft dough. If it’s too dry add a dash of water, too wet a dusting of flour.
  2. Once you have a nice soft dough that is fully combined, wrap it in clingfilm and rest for 20 minutes. Realistically speaking I quite often just make a cup of tea and then crack on!
  3. Cut a golf ball size off the dough, dust your work surface and flatten with your hand. Then using a rolling-pin roughly roll out to about 1/2 cm thick. You’ll want to roll it a bit, turn it over, dust it s little and roll again. Continue until quite thin. It won’t be round or pretty but in its own idiosyncratic way it will be beautiful.

Lamb mince topping – Ingredients:

200g lamb mince

1/2 small onion finely diced

1 clove garlic finely diced

Small handful chopped parsley + extra for garnish

Small handful choppedcoriander

Zest 1/2 lemon + squeeze lemon juice for garnish

1tbl dried oregano

1 tbl smoked paprika

1 whole chilli chopped

3 tbl grated halloumi

2 tbl tomato purée

Lamb Topping – Method:

  1. Pre-heat your oven to 250c
  2. Mash together all the ingredients.
  3. Lightly dust a baking tray and lay the flatbread out onto the tray and gently paste the mince mixture quite thin (about 1/2 cm) try to go to the very edge of the flatbread as the mince topping will shrink a little as it cooks (and will stop the flatbread from burning).
  4. Pop into the pre-heated oven for 5-6 minutes (it should have just started to brown on top).
  5. Remove, garnish with a scattering of fresh herbs, salt and a little squeeze of pepper.

Goes great with a cold beer and lots of family!
