Our garden was a little bit of a struggle this year. Between the weather and my health it didn’t get the kind of attention my hubby likes to devote to it. But, we did enjoy some wonderful fresh veggies and herbs and we are still harvesting potatoes! Hubby rescued three acorn squash too.I have Six Acorn SquashRecipes to share with you today. A nice departure from the usual baked butter and brown sugar recipe. These recipes will be great as side dishes to your upcoming holiday menu. But, remember it is important to have a “dry run” when you plan to serve something new to yourfamily and guests. Make it at least once before sharing it with others.
Add some walnuts to the standard brown sugar baked acorn squash.Baked at 400°
Carefully cut the acorn squash in half (this might be the toughest part). Use a spoon to scrape out the seeds and stringy pieces . Keep scraping with the spoon until the squash is smooth inside. On a deep lipped baking sheet or roasting pan put the squash cut side up. Add about 1/2 inch of water to the pan. Using the back of a spoon spread about a teaspoon of butter into the hollowed squash. Add about one rounded tablespoon of brown sugar. Add chopped or halved walnuts (2 full walnuts 6-8 pieces). Pour a teaspoon of maple syrup over it all. Bake for about 1 – 1 1/2 hours or until the squash can be easily poked with a fork.

So I am not supposed to use my family and friends as guinea pigs for my recipes? LOL Too late been making that happy mistake for years… I love all of these acorn squash dishes so can’t decide which one to try first. I hope you are having a good health week. Take care dearest Katherine.
