This is one easy baked potato recipe that has become my favorite way to cook potatoes.

This recipe makes for a delicious side dish to most any main dishes from roasts, chicken, steak and even pork tenderloin.

How to Make Oven Roasted Potatoes

It’s important to note that this recipe calls for red potatoes, but I firmly believe in preference when it comes to best results. So if you want to use Yukon Golds or Russet Potatoes, please go ahead.

Add the olive oil, garlic powder, parsley and black pepper to a large zip-top bag or large bowl. You can also add Italian seasoning, chili powder, onion powder and/or some parmesan cheese if you so wish as well.

Sometimes I like to add some Kosher salt to the seasonings. Again, it’s all about preference!

Take your cleaned and cut small potatoes and pat them dry with paper towel. Then place them in the bag with your mixture.

Shake well to coat the potatoes, and place in a single layer (or even layer) into a baking dish or sheet pan. Any rimmed baking sheet will do. Then bake for 25-30 minutes at an oven temperature of 375.

They are done when the potatoes are forkable and golden brown. In the last few extra minutes I do like to cook at a high temperature so that the potato skin has crispy edges.

It’s especially nice when I have the meat in the slow cooker, such as a whole chicken, and can cook the potatoes in the oven, and vegetables on the stove. Some say it’s too many steps but it’s all in the timing.

It’s a recipe that leaves the skin on, which makes for a colourful dish don’t you think? Red Potatoes are so delicious and pretty! It sure adds some colour to an otherwise drab white potato.

We don’t eat too many potatoes in the summer months, instead I usually opt for salads and veggies. Perhaps only a few times through the warmer months with steak and the occasional potato salad.

Yet in the Fall and Winter months, potatoes are made more often and paired with many mainsfrom roast to chicken such as Grilled Greek Chicken.

Oven Roasted Redskin Potatoes

Cook Time: 30 minutes

Total Time: 1 hour 5 minutes

Ingredients

  • 1 pound redskin potatoes, scrubbed and diced
  • 2 tbs Olive Oil
  • 2 tsp Garlic Powder
  • 2 tsp Dried Parsley
  • 1/2 tsp Black Pepper
  • Sea salt to taste

Instructions

  1. Preheat the oven to 375 degrees.
  2. After scrubbing and dicing the potatoes {leave the skin on}, place them in a bowl and allow them to sit in cold water for 30 minutes prior to roasting.
  3. Add the olive oil and seasonings to a large zip-top bag.
  4. Pat the potatoes dry and place in the bag with the olive oil and seasonings. Shake well to coat the potatoes.
  5. Bake 25-30 minutes, until forkable and golden brown.
  6. *Makes approximately 4-5 servings.
