Personally, I LOVE monkey bread. I am not sure what it is about but I love it. It brings me right back to my childhood. My grandma would make it when we stayed over. I mean who doesn’t love monkey bread.

Well, this lemon monkey bread is a fresh new spin on the original cinnamon sugar recipe! The sweetness from the icing mixed with the zesty lemon flavor is such a great combination.

The lemony flavor even wakes you up a bit with the slightly sour flavor. Sour and sweet, oh how well they go together in this refreshing monkey bread recipe. I love bringing these to events with the girls or friends and family get-togethers.

TIME TO GET STARTED MAKING THIS MONKEY BREAD RECIPE!

Start by making sure to zest your lemon and that your frozen rolls are thawed but still cold when you begin this recipe.

Next, you are going to spray a 9×13 inch baking pan with nonstick cooking spray. Then, cut the rolls in half and place them in the bottom of the greased pan.

In a small bowl, mix together the lemon zest and sugar and set it aside as this is going on top of the rolls.

Then, in another microwave-safe bowl, melt a ¼ cup of butter and then drizzle the melted butter over the top of the rolls.

After you have butter the rolls, sprinkle half of the lemon zest mixture over top of the rolls.

Now, cover the rolls with saran wrap and let the rolls rise until they have doubled in size. This step will take between 4-6 hours.

Once they have risen, preheat your oven to 350 degrees.

After the rolls have doubled in size, remove the saran wrap and sprinkle the remaining sugar and lemon zest mixture over top.

Next, pop the rolls in the oven and let them bake for 20-25 minutes or until they are no longer doughy. Once they are done take rolls out of the oven.

Lastly, just whisk together the powdered sugar, 1 tablespoon of melted butter, and fresh lemon juice and then drizzle it over top of the rolls.

Ingredients

  • 12 Frozen Rhodes Rolls (or other frozen rolls), thawed but still cold
  • zest of two lemons
  • ½ cup sugar
  • ¼ cup butter melted

Citrus Glaze

  • 1 cup powdered sugar
  • 1 Tablespoon butter melted
  • 2 Tablespoons fresh lemon juice

Instructions

  • Cut rolls in half and place in a 9×13-inch baking dish sprayed with nonstick cooking spray.

  • In a small bowl combine lemon zest and sugar; set aside.

  • Drizzle 1/4 cup melted butter over rolls and sprinkle on zest/sugar mixture, reserving half of mixture to sprinkle on just before baking.

  • Cover rolls with plastic wrap and let rise until doubled in size.

  • Remove plastic wrap and sprinkle on remaining lemon zest/sugar mixture.

  • Bake at 350 degrees F. for 20-25 minutes.

  • Remove from oven.

  • Whisk together glaze ingredients and drizzle over top of rolls.

Notes

You can let them rise overnight. You may want to check them after 4-6 hours to see if they have doubled in size.

    Where the rolls are only 1 layer thick in the pan, it shouldn't take as long to rise. I'm thinking around 4 hours and they will be done rising.

    I cut them into quarters (instead of just halves) after thawing for about 5 minutes, and let them rise overnight. I had put them together about 10 PM - checked on them at 7:30 the next morning and they had risen just perfectly!

    I'm a little confused about if I'm supposed to only sprinkle on half the sugar & zest or also wait to sprinkle also half butter before baking

    The butter is added in step 3. After they have risen and right before baking, add the rest of the lemon zest/sugar mixture.

    I love this recipe so much!! I have substituted the butter for dairy free options and they taste the same. I also like switching it from lemon and doing an orange. Honestly I eye the lemon and orange each time.... along with the amount of rolls used. My family prefers the orange version.
