Hey there! It’s Hayley, with this week’s recipe roundup. And as you can see, we’re celebratingall things vegetarian today!
I’ve had veggies on the brain a lot lately. I just tend to eat more of them during the summer, cravinglighter fare over heavier foods. However, us non-vegetarians tend tobe kind of skeptical of traditional meat dishes beingmade meat-free. The biggest concern? Protein. Will we get enough of it without meat? Will we still feel full or sated after our meal? Will the dish feel like it was totally missing the main ingredient? Well with these 15 recipes, we can honestly say “yes.” Each and every one of them is completely satisfying, completely mouthwatering, andcompletely vegetarian.
So whether you’re a vegetarian or not, chances are you’re probably striving to fit a few more veggies into your diet. And we could all stand to eat alittle more green, right?

Wow, Ali! So much YUM! I try to cook vegetarian on weeknights (not just Meatless Monday at our house) or at least keep the meat to an accent, not the main dish. This group of recipes looks like a great addition to my arsenal of yummy veg dinner plans.

Interesting collection of recipes. I found several I’d be interested in making, but I’m not sure my husband would like them. Poor guy, I’m always experimenting on him, and he generally takes it pretty well. The Honey Lime Quinoa Stuffed Sweet Potatoes has been in my regular rotation for quite a while, and I love it. I actually do it as a casserole instead of stuffing the sweet potatoes. Definitely recommend that recipe to everyone.

I think most people have a bad impression of vegetarian meals because they think of veggie version of meat like chik’n nuggets or veggie burgers… which can be good, but don’t taste anything like what they are supposed to be replacing. I like your list because it’s not trying to be a fake meat meal, but a meal focused on lots of grains and veggies with lots of flavor. If you don’t tell them it’s vegetarian, people won’t even notice and will enjoy a tasty, healthy meal! Yay veggies! :)
